How to Make Vermicelli Upma at Home

INGREDIENTS

1 cup Vermicelli

1.5 cups of water

½ teaspoon salt

1 green chili finely chopped

Small piece of Ginger finely chopped

1 sprig of curry leaves

1 small onion finely chopped

¼ tsp mustard seeds

¼ tsp urad dal

¼ tsp chana dal

2-3 tsp peanuts

A pinch of asafoetida or hing

2-3 tbsp grated coconuts

½ cup mixed vegetables like carrots, beans, and peas (optional)

METHOD

  •  In a pan, dry roast the vermicelli till it gets light brown in color (in case you are not using roasted vermicelli). Keep it aside.
  • In another pan, dry roast the mustard seeds, urad dal, and chana dal.
  • Once they start spluttering, add the finely chopped ginger and green chilies, curry leaves, and onions. Saute them for 2 minutes.
  • Once the onions become transparent, you can add peanuts, hing, and mixed vegetables.
  • Add water and salt and bring it to a boil. Allow the vegetables to cook and become tender.
  • Once cooked, add the vermicelli and keep stirring till it becomes soft. Cover the pan and allow it to cook till it becomes soft, and the water is fully absorbed.  (In case you feel the vermicelli is uncooked, add little boiling water and saute them)
  • Add grated coconut. Cover the pan and cook on low heat for 2 minutes.
  • Serve hot vermicelli upma with coconut chutney.
