Vegetarian Burmese Khow Suey Recipe | One Pot Meal

Traditionally this dish is made from meat and rice noodles but I make a vegan version with vegetables. It’s one of those comforting dishes that can be enjoyed as a one-pot meal.

This recipe might not be authentic but I promise you it definitely tastes yum!

I have used Ching’s Hakka Noodles in this recipe, but you can use any noodles as per your taste and preferences.

INGREDIENTS for Burmese Khow Suey 

4 cups Noodles

The following ingredients need to be ground into a smooth paste

5 whole dry Kashmiri red chilies

2 onions finely chopped

1 ½ tsp coriander seeds

½ tsp peppercorns

2 tsp cumin seeds

½ tsp turmeric powder

1 tsp chopped garlic

2 tsp chopped ginger

2 sprigs Lemongrass

 

For the Curry

2 bay leaves

7-8 curry leaves

½ cup grated onions

2 cups of steamed vegetables ( carrots, beans, cauliflower, peas)

2 ½ cups coconut milk

2 tbsp gram flour (besan)

2 tsp jaggery

Salt to taste

Garnish 

¼ cup Chopped coriander leaves

2 tsp lemon juice

¼ cup spring onions

½ cup roasted peanuts

2 tbsp roasted garlic

How to Make Burmese khow suey

  1. Rinse the chopped vegetables like carrots, beans, cauliflower, and peas in water and steam them till they are cooked
  2. In a pan add onions and garlic and saute them till they become translucent.
  3. In another pan, take sufficient water and cook noodles till they become tender.
  4. In a mixer grinder, add the ingredients to make the curry and blend together to form a fine paste.
  5. In another pan empty the curry paste from the blender and saute it for 2 minutes.
  6. Add gram flour and little water and cook it for another 2 minutes
  7. Add 2 cups of water and coconut milk and stir well to bring it to a smooth consistency.
  8. Add salt and jaggery as per your taste
  9. Add the steamed vegetables to this mixture and mix it well.
  10. Turn the flame off after 5 minutes.
  11. In a serving bowl, remove the cooked noodles, add the roasted garlic, peanuts and pour the soup. Garnish it with chopped coriander leaves, spring onions, and lemon juice.
